Ingredients:

  • 1 whole turkey (12-15 pounds)
  • Salt and black pepper, to taste
  • 1 cup (2 sticks) unsalted butter, softened
  • 3 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • Zest of 1 lemon
  • Zest of 1 orange
  • 1 cup chicken or turkey broth
  • 1 onion, quartered
  • 1 lemon, halved
  • 1 orange, halved

Instructions:

  • Preheat your oven to 325°F (165°C).
  • Remove the giblets and neck from the turkey cavity. Rinse the turkey inside and out and pat it dry with paper towels.
  • In a bowl, mix together softened butter, minced garlic, chopped rosemary, chopped thyme, lemon zest, and orange zest until well combined.
  • Carefully lift the turkey skin and rub half of the herb and citrus butter directly onto the turkey breast, under the skin. Rub the remaining butter over the outside of the turkey.
  • Sprinkle the outside of the turkey with salt and pepper.
  • Place the quartered onion, halved lemon, and halved orange into the turkey cavity. This will add flavor to the turkey as it roasts.
  • If desired, truss the turkey with kitchen twine to help it cook more evenly.
  • Place the turkey on a rack in a roasting pan, breast side up.
  • Roast.
  • Once the turkey is done, remove it from the oven, cover it loosely with foil, and let it rest for at least 20-30 minutes before carving.
  • Carve and Serve.
